Summary of the idea:
The idea is to develop a new generation of probiotic functional beverages using agro-food waste, microencapsulated probiotic bacteria, bottling into controlled release bottles. Microcapsules containing probiotics bacteria will be stored into bottle cap until consumption of the beverage when the consumer must push the bottle cap and the microcapsules will be released into the juice mass. Thus, will be designed innovative functional probiotic beverages with the impact on gastrointestinal health, increasing the innovation rate in this area, stimulating new beverage opportunities and taking away barriers for the transfer of knowledge to real innovation.
The practical relevance of the idea: the product will have a low price because of the utilization of agro-food waste; the probiotic survival will be increased by using microencapsulation; the utilization of a smart bottle to keep the microencapsulated bacteria in bottle cap until consumption.
